Dr. Shashi Kumar C. is an Assistant Professor in the Division of Food Processing Technology at Karunya Institute of Technology and Sciences, having joined the institution in July 2025. He holds a Ph.D. from the Indian Institute of Technology (IIT) Guwahati, an M.Tech. from the National Institute of Technology (NIT) Rourkela, and a B.Tech. from the University of Agricultural Sciences (UAS), Bangalore. His academic background reflects strong expertise in food engineering, post-harvest technology, and food processing.
He teaches courses including Instrumental Methods for Food Analysis, Transport Processes in Food Engineering, Process Economics and Plant Layout Design, Food Analysis Laboratory, and Food Additives Laboratory. He has also supervised research projects at the M.Tech., M.Sc., and B.Tech. levels, demonstrating his active involvement in student mentoring and academic research guidance.
His research interests focus on post-harvest processing of grains and their value addition, disinfection of grains using non-chemical technologies, and food packaging and storage. He has actively presented his research at national and international conferences, contributing to advancements in grain processing, storage technologies, microwave processing, food packaging, and shelf-life enhancement.
Dr. Shashi Kumar has published research articles in reputed international journals and conference proceedings and has contributed to several book chapters. His publications cover areas such as grain processing, microwave-assisted disinfection, food packaging, storage studies, drying technology, engineering properties of agricultural materials, equipment design, and biopolymer-based food packaging, reflecting his contributions to food engineering and post-harvest technology research.
